Since 2013 we have used an assortment of cooperages to extract different flavors, aromas and structural components in our wines. Each has had a different use and purpose depending on the vintage, varietal and ensuing characteristics in each wine.
Each lot that receives a new oak barrel is carefully chosen so that it can receive the most benefit while it is aging for years to come. Even if a barrel is being reused for a future vintage, and is neutral in character, we diligently evaluate each lot that might best fit.
